Soft Raisin Cookies\ \ Makes about 9 dozen\ \ 2 cups raisins\ 1 cup boiling water\ 3/4 cup shortening\ 2 cups sugar\ 3 eggs\ 1 tsp. vanilla\ 4 cups flour\ 1 tsp. baking powder\ 1 tsp. baking soda\ 1 tsp. salt\ 1 tsp. cinnamon\ 1/4 tsp. cloves\ 1/4 tsp. nutmeg\ 1 cup chopped nuts/\ \ 1. Add boiling water to raisins. Cook 5 minutes. Set aside to cool.\ \ 2. Cream shortening and sugar. Add eggs and vanilla and beat well.\ \ 3. Sift together flour, baking powder, baking soda, salt, and spices. Add alternately with raisin liquid to creamed mixture. Stir in raisins and nuts.\ \ 4. Chill dough for several hours or overnight.\ \ 5. Drop by teaspoons onto greased cookie sheet. Bake at 350 degrees for about 12 minutes.\ \ Amish Cookies\ \ Makes 7 1/2 dozen\ \ 21/2 cups sugar\ 1 1/8 cups shortening\ 3 eggs\ 2/3 cup dark molasses\ 1 cup sour milk\ 6 1/2 cups flour\ 2 Tbsp. baking powder\ 3 Tbsp. cinnamon\ 2 Tbsp. soda\ 1 1/2 tsp. nutmeg\ 2 cups oatmeal\ 1 cup raisins\ 3/4 cup chopped peanuts or walnuts/\ \ 1. Cream sugar and shortening. Add eggs and beat well.\ \ 2. Add milk and molasses alternately with sifted dry ingredients.\ \ 3. Add oatmeal, raisins, and nuts. Mix with hands. \ \ Bake at 350 degrees for 8-10 minutes.
